a snowy thursday in tennessee!

after my first post tuesday, mike came back by the house and we headed out to get food because we hadn't eaten yet [aside from my sorbet, yum!]. we headed to the grocery store [kroger] and got all kinds of goodies to make burritos, veggie stirfry, vegan pancakes, etc. then we headed to whole foods to get some tempeh, soy yogurt, and some new vegan "cheese" we're going to try. mike had never had Sweet CeCe's before so we went. Yeah, thats right.. I had it twice tuesday.

my sweet cece's cup. pomegranate raspberry sorbet
+ cap'n crunch + sliced kiwis!

SO GOOD!

yesterday was SUCH a lazy day. we went to bed early on purpose [quarter after midnight!] so we could set our alarm for 9am. we were determined to be productive. well... 9 rolls around, the awful alarm sounds, mike gets up, i stay in bed. i fall back asleep because i'm difficult and wake up at 10... i STILL dont want to get out of bed so i convince mike to come back to sleep... we sleep the day away. seriously. i think we got out of bed at like 1:45pm or something ridiculous. i legitimately slept for over 13 hours. WIN WIN! after we got up we got dressed, attempted to clean my room some more [read: sorted through a crap ton of clothes, put some back in my closet], went and did 4 loads of laundry [what an adventure!], went to target where i tried to buy a really cute dress but mike ripped it from my hands and said NO! [i sulked for a while :( but he was right], then we went to walmart [where i totally got a miley cyrus skirt for $12! holla!] and a new card reader.

we came home and i did bloggy things while he cooked dinner. we had a pasta veggie something-or-another. it was yummy though! we stayed up for a while working on uploading dumb youtube videos [see last post] but they are nothing to write home about. we went to bed at about 3:30am and somehow, magically, managed to drag ourselves out of bed at 10:30am after mike reprimanded me for turning of both alarms... yet again. I HATE WAKING UPPPP! I CANT HELP ITTTTT! i like to sleep the day away and then regret it. anyway, we got up, ate some toast, headed out to petsmart to get G some tear stain remover and a new pink harness [so cute!]. it was snowing and we took silly videos of it. its like the tennessee apocalypse and we havent even accumulated 1/4 of an inch. truth! we came home, made some lunch [i had a yummy veggie burger and mike had a vegan noodle stir-fry and spring rolls!] and now here we are! BEING PRODUCTIVE! huzzah!

i'm hopefully doing the extensions and hair curling tutorial videos everyone has been asking for today. al;dfjka;ldsfj i feel so awkward in front of my iMovie doing a video like that but i shall persevere! then i'm going to clean my room, dye my hair, and i dont know... try to do things. thennnnn we're going to make vegan nachos for dinner and watch "The Goods" or whatever that movie is called. holla!

oh, mike picked out the dress that i wore today! trufax! so stylish, he is! two thumbs way up, boyfriend!

i am a fan of this outfit! so winter appropriate!

a YUMMY vegan recipe!

okay okay! so i promised the recipe to the yummy vegan stirfry that mike and i make [read: i just cut the vegetables... he actually makes it haha]. and finally! my cardreader works so here you go! you guys should DEF try it! feel free to ask if something isnt described in enough detail, etc!

What you'll need:
  • 1 pack Wild Rice Tempeh [can be purchased at Whole Foods]
  • 1 pack Brown Rice
  • 1 red pepper
  • 1 yellow squash
  • 1 zucchini
  • 1 pack of stir-fry veggies [snow peas, carrots, broccoli]
  • Sliced mushrooms
  • 1 bottle of Stir-fry sauce [any brand is fine, the kind we got has a ton of sodium... bleh!]
* Start by washing & slicing the vegetables in halves & then halves again [quarters, derrrr]. Then slice those up into smaller pieces for the stir-fry... As shown below:

* Boil a pot of water and cook as much rice as you think you'd like [typically 1-2 cups, depending on how many you're feeding]. Boil the rice for about 30 minutes. [The package says cook it with a certain amount of water, but really, cook it with less. You want it to remain a little firm.] Basically cook it at your own discretion.

* Gather together all of your vegetables.

* Take the tempeh out of the package and slice it long ways. Then cube it up in a similar manner that you did the vegetables.

* Boil a pot of water and cook the tempeh for about 7 minutes.

* Then strain the tempeh and stick it in the oven on a cookie sheet for 8-10 minutes [until it is golden brown.] at 450 degrees F.

* Fix up a pan and put a very thin coat of olive oil and heat it up until the oil is nice and hot, then put in the vegetables. Let the veggies simmer until most of the olive oil is gone and then put in the stir-fry sauce. [or whatever sauce you choose, we're going to try sweet & sour next!]. Put the sauce in by thirds. Let the veggies soak up the sauce a little. The best rule of thumb for timing this is to try a carrot. When the carrot is at a decent texture, add in the rice & the tempeh and cook them around a little more. Continually turn the veggies and tempeh so it allows them to soak up more of the sauce. The timing is completely at your discretion [don't be afraid to try it while it's on the stove. Only you will know when it's the right amount of "done".]

* Then TAH-DAH! it's done! and eat it upppp!

It's such a fantastic recipe and Mike is oh so good at making it! I could literally eat it almost every day! We're going to try it with different sauces until we find one that is perfect. The regular ol' stir-fry sauce is great, but it's highhhhh in sodium! If you try it, let me know how it turns out for you! It's a wonderful way to try something vegan if you're thinking about making the switch, and it's something that even meat-eaters can enjoy!

Tattoo Tuesday!

i've always had 2 tattoos picked out as my favorite chest pieces of ever all time until yesterday... when i saw THIS beauty. oh my stars. it's rightfully taken the #1 pedestal and i'm not sure anything will ever live up to it. the colors, the detail, the fact that its a giant squid wrestling a whale! [i'm a HUGE marine biology nerd... you'll catch me watchin Colossal Squid and Shark Week like it's American Idol and Twilight to some people.] This is property of BlackIowaDirt [click to see the entire set on Flickr!] and it was done by Tim Biedron at Deluxe Tattoo in Chicago.

bloggity bloggity blog-ness.

so i didnt get around to posting yesterday (man i suck at this whole posting mixtapes thing) but mike made a mixtape for you all! i bet you're excited, right?! i'll have him post it today! i'm trying to keep up with blogging regularly, like i said i would... this is effort! huzzah! anyway, i'll start with monday... that seems like a good jumping off point, don't you think? okay.

well, after leaving panera on sunday evening, i came home and fixed my sewing machine myself [hallelujah!] and proceeded to sew some bunting and some pillows for my room [i literally have 30 pillows in my room... what on earth am i going to do with them all?!?!]. afterwards elle and i agreed to meet at starbucks for some coffee and conversation. i was really glad we did because elle is one of my closest lady friends and we haven't had a chance to hang out at all over break. she's dating my best friend/roommate bryan so we're always with the boys now. we sat and talked about life, relationships, schools, plans, etc... it sounds like generic conversation but it never is with her. thats what i like about our friendship. anyway, we talked for about 2 hours and finally got kicked out because it was closing time. i came back home and mike and i made vegan chili for dinner and we decided to bake a vegan cake. [its not as time consuming or crafty as you might think]. this is where the silly videos came into play. we stayed up wayyyyyyyyy too late [almost 7am] and we slept wayyyy in.

on monday [yesterday], we ran a ton of errands. we tried finding mike a peacoat somewhere in town [no luck!] and we searched the world over for a decent iphone case, too. [he ended up with a blueberry scented jelly belly blue case. it smells AWESOME!]. ate pizza [it was mike's first vegan no-cheese pizza. he was a fan!]. then we decided we should tear apart my room and reorganize all of my clothing. after hanging about 100 dresses, we called it quits.

Monday's Outfit Details:

Dress: Target $20
Cardigan: Target $20
Tights: Target $7
Flats: Walmart $9
Brooch at waist: Vintage

today we ran more errands [it seems that we have more errands than you can ever imagine] and i took my car to the dealership and dropped it off. i'm FINALLY getting that awful smashed in windshield replaced. [remember THIS incident last month? yeah...]. hopefully dude's insurance pays for it because i have to have my entire hood painted, too. bleh. mike then took me to campus and dropped me off to meet merissa and kayce. we all piled in the car and went downtown to Sweet CeCe's to meet Caitlin and eat frozen yogurt [i had the Pomegranate Raspberry Sorbet. it was FANTASTIC! with sliced banana & kiwi!]. we talked for a while and now i'm back home. mike just showed back up and i have no idea what we'll get ourselves into tonight. we shall see!

Today's Outfit Details:

Cardigan: Forever 21 $30
Brooch at waist: Forever 21 $5
